This programme is designed for people who wish to gain an understanding of principles and practice of Catering Operations. No prior knowledge is required.

The course is divided into modules as follows:

  • 2. Catering markets and events
  • 3. Marketing catering activities and services
  • 4. Improving and maintaining client relations
  • 5. Working with other hotel departments and functions
  • 6. Meal functions and menu planning
  • 7. Beverage functions and planning
  • 8. Function room selection and set-up
  • 9. Production and service planning
  • 10. Other Client Services

This course is assessed through a series of tutor marked assignments. No attendance at an exams centre is required.
